Umami

Umami (jap. 旨味, boar. „fleischi und heazhoft, woischmeckad“) is a Gschmocksrichtung, so wia saua, siass, soizig...[1] Es is a voimundiga Gschmo.

De Gschmoqualitet umami wead durch Glutamat ausglest. Glutamat is bei uns vor oim ois Gschmovasteaka in da Fertignoahrung z findn.
